Italian SaucesMaria Liuzzo
Sauces are the shining stars of the Italian culinary repertoire. Come learn the secrets of successful sauce-making as we cover a variety of recipes such as marinara, carbonara, bolognese, pesto, olive oil with garlic and alfredo. Using fresh ingredients, we will make three sauces each session. We will also discuss varieties of pastas, which pasta is traditionally paired with which sauce, and which sauces work best with chicken and fish. Maria Liuzzo, a third generation cook, has been cooking Italian dishes for 25 years. She created her own cookbook, which is filled with over 50 family recipes.

Dessert CanapesCornelia Zell
The lastest culinary craze is small bites and these easy and distinctive desserts will impress your guests. Give them a variety of sweet surprises for the ending of a sit-down dinner, high tea, or cocktail party. Most are miniature versions of well known desserts and you'll have fun making eight different dessert bites which you may add to your repertoire of recipes. Pecan Tassies, Kiwi Lime Dessert Cups and Taffy Apple Tartlets are a few recipes we will prepare. Cornelia Zell has a M.S. in Home Economics Journalism and worked at Sunset and Prevention Magazines.

Working with Puff Pastry and Phyllo DoughCornelia Zell
We’re offering this popular class just in time for the holidays. We’ll make both savory and sweet puff pastry recipes that will bring elegance to your parties or any dining occasion. The recipes will incorporate decadence into dishes from appetizers through dessert. You will work with both doughs, gaining the confidence and ability to create delicacies worthy of being served at the finest catered events. Based on popular demand, this class is once again offered. Cornelia Zell has a B.S. in Home Economics Journalism and worked for Sunset and Prevention Magazines.

Take a gastronomic tour with others sharing your passion for food and learn the art and secrets of authentic Italian cuisine. The classes are mostly demonstrative, with some hands-on cooking. Basic Cake Decorating - October 7Julie Dickens
Celebrate that special occasion by creating a cake decorated by your own loving hands. In this class, you will cut, fill and coat your own cake, learn piping techniques and buttercream icing and use fondant for decorating. You'll see how easy and rewarding it is to decorate wonderful cakes that will delight your family and friends. Students will leave with a beautiful creation safely tucked away in a bakery box. Julie Dickens of Beascakes in Armonk will provide a delicious cake for each participant to decorate.
